Chilled Cherry Bars ๐Ÿ’๐Ÿ’

These bars taste like a bite of cherry pie ice cream!! Truly the perfect way to close out the Summer. After making so many recipes with a raw foods crust, I donโ€™t think Iโ€™ll ever go back to the ways of butter and Graham crackers. The date + nut combo not only tastes better but also doesnโ€™t give you a sugar hangover. Not to mention, the natural cherry filling!

Ingredients:
Crust:
– 2 cups of almonds
– 10-12 pitted dates
– 1 tsp of vanilla extract
– 1/3 cup of shredded coconut
– 2 tbsp of coconut oil
– Pinch of sea salt
– 1 tbsp of water (if needed)

๐Ÿ’Cherry Filling
– 2 1/2 cup of frozen cherries
– 2/3 cup of cashews (soaked 1 hr)
– 1/4 cup of unsweetened shredded coconut
– 3 tbsp of cashew butter
– 3 tbsp of pure maple syrup
– 1 tbsp of lemon juice
– 1 tsp of vanilla extract

Directions:
1. Flash soak your cashews to soften them by adding them to a pot of warm water for 1-2 hrs. This helps smooth the consistency of the filling.
2. Meanwhile make the crust by adding all crust ingredients to a food processor and pulsing until a stick mixture is formed. Press into an 8×8 pan and store in fridge.
3. Make filling by adding all ingredients (including soaked cashews) to a high speed blender and pulsing until smooth (add an extra tbsp of lemon juice if itโ€™s not blending well enough
4. Pour filling into crust-lined pan and place in freezer. If not serving within a few hours, store in freezer and place in fridge 1 hr before serving.
